Ingredients
- 1/2 cup · Farro (grain)
- 1 medium · Sweet Potato (vegetable)
- 1/2 · Red Bell Pepper (vegetable)
- 1/4 · Red Onion (vegetable)
- 2 tbsp · Chipotle Peppers in Adobo Sauce (sauce)
- 1 tbsp · Lime Juice (sauce)
- 1 tbsp · Honey (sauce)
- 1 clove · Garlic (sauce)
- 1/4 cup · Greek Yogurt (sauce)
- 1 · Jalapeño (topping)
- 1 tbsp · Cilantro (topping)
Instructions
- 1 Preheat your oven to 400°F (200°C).
- 2 Cube the sweet potato into bite-sized pieces. Toss with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for 25-30 minutes until tender and lightly browned.
- 3 While the sweet potatoes are roasting, cook the farro according to the package instructions until tender. Drain any excess water and set aside.
- 4 Prepare the Spicy Chipotle-Lime Sauce: Blend together 2 tbsp of chipotle peppers in adobo sauce, 1 tbsp fresh lime juice, 1 tbsp honey, 1 clove of garlic (minced), and 1/4 cup Greek yogurt until smooth. Adjust seasoning with salt and pepper.
- 5 Chop bell peppers and red onion into strips. Sauté in a pan with a bit of olive oil over medium heat until they are slightly charred and softened.
- 6 Assemble the bowl: Place a serving of farro at the base. On top, layer the roasted sweet potatoes and sautéed bell peppers and onions.
- 7 Drizzle generously with the Spicy Chipotle-Lime Sauce.
- 8 Garnish with sliced jalapeños and a sprinkle of chopped fresh cilantro for an added kick.
